These donuts turned out so well and are the perfect summer treat. Originally we were going to make lemon blueberry donuts (classic) but when we couldn't find freeze dried blueberries we decided to try something completely new: haskap berries. If you cannot find these berries where you live you can definitely substitute for blueberries. These donuts are gluten free and can be easily made vegan.
This recipe will make roughly 12 small donuts.
Here's what you'll need:
Donut:
1 1/4 cup almond flour
1 1/4 cup brown rice flour
1/2 cup tapioca flour
3/4 teaspoons baking soda
1 pinch of salt
3 large eggs room temperature (or flax egg equivalent if vegan)
1/3 cup milk of your choice
1/3 cup maple syrup
1/2 cup sugar
1/4 cup olive oil
1 splash vanilla extract
Zest of 1 lemon
Juice of 1 lemon
Icing:
1 tablespoon butter or vegan butter
1 1/4 cup powdered sugar
1 1/2 tablespoon water
1/2 teaspoon vanilla extract
Juice from one large lemon slice
Instructions:
Preheat your oven to 350°F and prepare your donut tray with oil.
In a large bowl, combine the almond flour, rice flour, tapioca flour, baking soda and salt.
In a separate large mixing bowl, whisk together the eggs, milk, maple syrup, sugar, olive oil and splash of vanilla, then slowly stir in the dry ingredients until a batter forms. Add your lemon zest and lemon juice and mix until combined.
Pipe your batter into the prepared donut pan.
Bake for 13 minutes or until a toothpick comes out clean.
Remove from the oven and let the donuts cool for 10 minutes in the pan, then transfer to a cooling rack.
Once the donuts have cooled completely you can make the icing.
In a mixing bowl, whisk the butter until creamy and then add in the powdered sugar, water and vanilla. Whisk together until smooth. Add lemon juice. If the icing seems too wet add some more powdered sugar, if it's too thick add tiny amount of water until it's an icing consistency.
Now you can dunk the donuts in the icing to cover them all and top off with sprinkles if you please. If it is hot in the house you may want to store them in the fridge to allow the icing to harden.
