Ingredients:
For the Rice Buns:
2 cups cooked jasmine rice
2 tbsp rice vinegar
1 tsp sugar
1 tbsp cornstarch
Neutral oil (for frying)
For the Beef Patty:
400g ground beef
2 garlic cloves, minced
1 small shallot, finely chopped
1 tbsp kecap mani
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp chili powder
Salt and black pepper
Toppings:
2 fried eggs (sunny side)
2 tbsp crispy shallots
2 tsp sambal
Boston leaf lettuce
cucumber slices
Instructions:
Prepare the Rice Buns:
Mix the cooked jasmine rice with rice vinegar, sugar, and cornstarch while warm. Let it cool slightly.
Divide the rice into 4 portions and shape into round, compact patties (about the size of a burger bun). Place in freezer to firm up for an hour before cooking.
When ready to cook, heat a little neutral oil in a skillet over medium heat. Fry each rice patty until golden and crispy on both sides. Set aside.
Make the Beef Patty:
Preheat Oven to 425.
Combine ground beef with garlic, shallot, kecap manis, ground coriander, cumin, chili powder, salt, and pepper. Mix until well combined but do not overwork.
Shape into 2 burger patties, slightly larger than the rice buns (as they will shrink slightly when cooked).
Heat a skillet over medium-high heat. Cook the patties for 2 minutes per side and then finish in the oven until internal temp reaches 165.
Assemble the Burger:
Place a rice bun as the base. Add lettuce, cucumber slices, and the spiced beef patty.
Spread your sambal over the patty.
Top with crispy shallots and sunny side egg.
Finish with another rice bun on top.
Enjoy :)
