Pear Galette

Ingredients:


For the Crust:

1 1/4 cups all-purpose flour

1/2 tsp salt

1 tbsp sugar

1/2 cup unsalted butter, chilled and cubed

3–4 tbsp ice water


For the Filling:

3 ripe but firm pears thinly sliced

2 tbsp brown sugar

1 tbsp maple syrup

1 tbsp melted butter

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp nutmeg

1 tsp vanilla extract

1 tbsp cornstarch

1/3 cup sliced almonds

1 egg for egg wash

1tbsp sugar



Instructions:


Make the Crust:


  1. In a large bowl, whisk together the flour, salt, and sugar.

  2. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs with pea-sized bits of butter.

  3. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix.

  4. Shape the dough into a disk, wrap it, and refrigerate for at least 30 minutes.


Prepare the Filling:


  1. In a large bowl, toss the pear slices with brown sugar, maple syrup, cinnamon, ginger, nutmeg, vanilla, and cornstarch. Fold sliced almonds into the mix. Let sit while you roll out the dough.

  2. Assemble the Galette:

  3. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  4. Cut the dough in half and roll out the chilled dough into two 8-inch circles on a floured surface.

  5. Arrange the spiced pears in a circular pattern in the center of the dough, leaving a border.

  6. Fold the edges of the dough over the pears, pleating as you go to create a rustic look. Brush the crust edges with egg wash. Sprinkle crust with some sugar.

  7. Bake for 40-45 minutes until crust is golden and pears are tender.


Finishing Touches:


Once out of the oven, let the galette cool slightly. Drizzle with honey or warm maple syrup for added shine and sweetness. You can even enjoy with a dollop of whipped cream or ice cream if your heart desires.
