Recently we made gluten-free mini lemon loaves with cream cheese frosting as a family and we had a blast.
E tried his first lemon and seemed to actually enjoy it, he helped stir and tried frosting for the first time and gave a big ole Mmmmm.
We used this recipe for the loaves however we made our own frosting.
We used one 8oz block of cream cheese, a splash of lemon juice and a couple of scoops of icing sugar.
You want to go by taste and texture. For us, we like more cream cheese taste so we didn't put too much sugar in. I think about 1/2 cup. Some recipes call for multiple cups which is too much for us.
