Worlds Best Hot Cocoa W/ Homemade Marshmallows

You absolutely need to try our yummy scrumptious homemade easy peasy hot cocoa. Perfect for snuggling up by the fire with a nice book, warming up in bed with a movie or just hanging out with the fam. This recipe can be made with any kind of milk/chocolate making it very easy to make for vegans as well. This recipe makes 1 large mug of cocoa, easily just multiply the recipe to make the amount you would like.


Here is what you'll need:


Cocoa:

1 1/2 cups of your choice of milk

1 1/2 tablespoons of unsweetened cocoa powder

8g (roughly 2 squares) of chocolate of your choice (we use Camino Mint Chocolate)

2 tablespoons of cane sugar

1/4 teaspoon of vanilla extract

1 pinch of salt.


Marshmallows:

3 tbsp gelatin powder

1 cup water

1 cup honey

1 tsp peppermint extract

2 tbsp icing sugar

pinch of salt


Instructions:


For the marshmallows:

  1. Mix gelatin with 1/2 cup water in the bottom of your mixer and let it bloom for 5-10 minutes.

  2. In a small pot, combine the remaining 1/2 cup of water with the honey. Bring to a boil, ensuring it doesn't boil over. Bring the mixture to a temp of 240.

  3. Add the boiled honey mixture to the bloomed gelatin and immediately start mixing. Start on medium until it comes together and then turn it up. Add vanilla and peppermint extract. Continue to mix for about 8-10 minutes total until it becomes a "fluff" texture.

  4. In a parchment-lined 8x8 baking tray, sprinkle half of the icing sugar to prevent sticking.

  5. Pour marshmallow mixture into the dish and spread with a spatula.

  6. Allow to set on the counter for at least 4 hrs.

  7. Remove from the dish and dust with remaining icing sugar before slicing.

  8. Dip in melted chocolate if desired.


Cocoa:


  1. Add 1/2 cup of your milk, the cocoa powder, chocolate squares, sugar, vanilla and salt into a pot on medium heat.

  2. Continue to whisk until everything has dissolved and the chocolate has fully melted.

  3. Add the remaining amount of milk and stir.

  4. After a couple of minutes, it should be the perfect temperature.

  5. Pour hot cocoa into your mug and top it off with your marshmallows. Sprinkle some extra cocoa powder on top or shave some chocolate if your heart desires.
